this and that
As of now, we have no exciting plans for the 4th. We live close to the fireworks show, so we can adventure down to the waterfront and watch if we want.
The Taste of Tacoma is happening as we speak. It is a free, fun, and very crowded event. Every year we attend, the same vendors are there. In fact, the same vendors at the Taste will be at the 4th of July event all day on the waterfront. So that being said, we will probably not go because of heat, crowds, and the fact I would be attending alone with Daria, and that is not the fun holiday good times I am looking for.
Actually, my real reason for not wanting to gorge myself with really bad food is because I have my annual physical on Monday morning and I do not want to put bad things in my system. Speaking of my physical, I just cannot decide if I should weigh myself before the appointment so I know what number to expect or not. Lately, I have been feeling like I might have lost a few, BUT I do not want to weigh in to find out because last time I thought this I was SO disappointed. However, I do not want to be surprised in the wrong direction at the doctor's office because that will make my blood pressure rise.
This is what goes through my mind on a Friday night.

what are you cookin' up?
Kahlua Fudge Sauce
1 3/4 cups
1 (14 oz.) can sweetened condensed milk
1/2 cup boiling water
6 TBS. unsweetened cocoa powder
1 tsp. instant espresso powder or 2 tsp. instant coffee granules
3 TBS. kahlua
Place milk in a small saucepan; cook 5 minutes over low heat. Combine water, cocoa and espresso in a small bowl, stirring until granules dissolve. Stir cocoa mixture into milk; cook 5 minutes, stirring frequently. Stir in liqueur; cook 1 minute. Remove from heat. Serve warm or chilled.
I poured it in a jar and sealed it, and there was part of the father's day gift of Micah's dad. (yes, I know it is late, that is Micah's choice)
Last night, when it was 90 degrees, I baked up Gooey Brownies with Shortbread Crust. It was so freakin' hot in our home - I did not think a little more unbearable heat would make the difference. At a certain point, hot is hot.
Let's just say....make these brownies because they are Super Good!!! We took them to Micah's folk's for dessert, and there is only 1 left! And that last one is mine because I have only had a small bite of one. Not fair I say!
Oh yes, here is what I have learned about quinoa. It is a wonderful whole grain and I highly recommend trying recipes that include quinoa. It is so easy and quick to cook up.

hello summer...
Here is something new:
The pool is no longer existing in our yard. Here is what happened:
Thursday: Micah inflated the upper ring of the pool.
Friday morning: I cleaned the pool like a crazy clean freak mother.
Friday afternoon: Started to fill the pool, but I realized the pool was not level and stopped the filling process. Emptied the pool - somewhat. Moved the pool to 2 more locations to see if it there is any piece of flat land in our backyard - the only small area is in the shade, in the dirt, and under a huge pine tree. The pool would never get warm there.
Friday night:Decide to wait for Micah to get home - which would be late. He could help me Saturday morning with the whole thing. I was sure the both of us could figure something out.
Saturday morning: We thought we figured out a way to make the pool level. At first, it seemed to be working, but after a while, it became quite apparent that the pool was NOT at all level. It was sagging in a completely new spot. I was able to partly fill it, so Daria could enjoy it that afternoon.
Saturday afternoon: Daria enjoyed the sagging pool. She had fun splashing and bouncing around on her pool toys. It was great entertainment. I just figured that on Sunday I would recruit my dad to help me get sandbags to level it out and set out on a new plan of attack to get the pool up and going.
Saturday night: Plans were in motion to get free sand on Sunday, and Monday we would have the pool level. Yippy! I went to bed feeling good with a sense of accomplishment because this pool will bring Daria so much joy this summer.
Sunday morning: After Daria and I eat breakfast, I decide to go out and check the pool, expecting to find it just how I left it Saturday night. Well, the pool was completely flattened and all the water was GONE! The cover was all balled up in the middle. I was shocked! I ran upstairs and told Micah that ALL the water is gone and the pool was deflated. Believe me, he was not pleased to be awakened by such an announcement.
At first, we did not know what really happened, but then we realized who destroyed our pool.

We have a family of raccoons living in the cedar tree by the alley. Micah saw them the other night when he came home. And it is known that these lovely creatures love to wash their food before they eat it, so when they saw our saggy pool sitting there half filled, they could not stop themselves.
Sunday afternoon: We went to Toys R Us and bought a kiddie pool that does not require a level yard. And it is hard plastic so the raccoons will not destroy our summertime toy.

Happy Father's Day!!!
This afternoon, Daria and I made homemade baguettes.
The baguettes are for the garlic bread Micah requested.
Back to the menu...
Garlic Stuffed Mushrooms
Honey-Garlic Angel Hair with Field Roast vegan sausage - Italian flavor
Parmesan Garlic Bread
Caramel Apple Crunch with vanilla soy ice cream
Here are the recipes to most of it. Enjoy!
Garlic Stuffed Mushrooms
12 mushrooms, wiped clean
4 TBS. butter, divided
2 grn. onions, trimmed and sliced
1 1/2 TBS. finely chopped walnuts
1 1/2 TBS. dry breadcrumbs
1 1/2 TBS. grated Parmesan cheese
2 cloves garlic, crushed
1/4 tsp. bk. pepper
Preheat oven to 350 degrees. Lightly grease a 9-inch square baking dish; set aside.
Remove stems from mushrooms; chop and set aside. Scoop out the mushrooms just a little to make a little bowl. Put the mushrooms in the pan open side up.
In a skillet, melt half the butter. Add the mushroom stems and grn. onions; saute until tender. Add walnuts, bread crumbs, Parmesan cheese, and remaining butter. Stir until butter is melted and absorbed. Stir in garlic and grd. pepper. Stuff each mushroom cap with stem mixture, mounding it neatly over the top. Bake in preheated oven for 10-15 minutes, or until thoroughly heated.
The baguettes were just the basic baguette recipe. For the garlic bread, I made a fresh basil, garlic, Parmesan butter and partially sliced the bread and spread the butter between each slice. Wrapped it up in foil, loosely and baked it for 15 minutes when the mushrooms were baking.
Honey-Garlic Angel Hair
First I sliced and cooked up two Field Roast vegan sausages, and set them aside.
Pasta:
16 oz. angel hair pasta
2-3 cloves garlic, minced
1/2 cup butter or margarine
1/4 cup honey
1 TBS. fresh basil, chopped
1 TBS. fresh parsley, chopped
1/4 cup grated Parmesan cheese
Cook pasta according to package. Meanwhile, in a skillet, saute the garlic in butter. Stir in the honey, basil, and parsley. This is where I added the Italian sausage. Drain pasta; add to garlic mixture and toss to coat. Sprinkle with Parmesan cheese. Serve immediately.
And here is my favorite part, dessert....
Caramel Apple-Strawberry Crunch
5 lg. Granny Smith apples, peeled and sliced
1 cup sliced strawberries
3/4 cup favorite caramel sauce
3/4 cup all-purpose flour
3/4 cup quick-cooking oats
3/4 cup packed br. sugar
1/2 cup chopped walnuts
1/4 tsp. cinnamon
1/2 cup cold butter or margarine
Vanilla Soy Delicious for ultimate enjoyment
Preheat oven to 375 degrees. Place sliced apples and strawberries in a greased 13x9x2-inch baking pan. Combine, so everything is evenly distributed. Drizzle caramel sauce evenly over the fruit.
In a lg. bowl, combine flour, oats, br. sugar, walnuts, and cinnamon; cut in butter until mixture resembles coarse crumbs. Sprinkle over apples and strawberries.
Bake at 375 degrees for 40-45 minutes, or until golden brown. Cool for 10 minutes. Enjoy with scoops of Vanilla Soy Delicious!
May need to change into something with an elastic waist.

so comfy
My shoes arrived today!!
When I checked the shipping status last night it said they would arrive towards the end of NEXT week.
Suprise!
The mailman rang the bell and there they were.
I put them on immediately, and let me tell you, they are the most comfortable shoe EVER!
I wore them all afternoon, and they feel so soft with good cushion.
I think they will work great on our trek through Disneyland.
I embarked on a new organizational task yesterday.
I am starting to put all our photos in order.
I had stacks of envelopes with pictures from 2003 to present day to frame, put in a photo album, giveaway, and/or toss out.
All over our kitchen table there are piles of photos.
About 7 different piles so far, and each pile can be divided into years and months and so on and so on.
I feel like it is never ending.
Why do I put off such a task to the point it takes days to finish?
I love looking at all the pictures, especially when they are put away and labeled.
My plan is to have this task mostly complete by next week or earlier - the earlier just depends on when I get to the store to find cheap photo albums.
Why are most photo albums so costly?
My wrist and fingers ache from labeling 2 years worth of photos.
Okay enough of that - I am going to walk around the house in my new shoes.

Milky Way Dreams
about 3 dozen or so
2 1/2 cups all-purpose flour
3/4 cup unsweetened cocoa
1 tsp. baking soda
1 cup sugar
1 cup brown sugar
1 cup margarine or butter, softened
2 tsp. vanilla extract
2 eggs
1 cup chopped walnuts
1 pkg. of mini Milky Way bars, unwrapped and kept frozen until ready to use
1 TBS. sugar
In sm. bowl, combine flour, cocoa, baking soda; blend well. In lg. bowl, beat 1 cup sugar, brown sugar, and margarine until light and fluffy. Add vanilla and eggs; beat well. Add flour mixture; blend well. Stir in 1/2 cup of the walnuts. Cover with plastic wrap; refrigerate for 30 minutes for easier handling.
Heat oven to 350 degrees. For each cookie, with floured hands, shape about 1 TBS. dough around 1 mini Milky Way candy, covering it completely.
In sm. bowl, combine remaining 1/2 cup walnuts and 1 TBS. sugar. Press one side of each ball into walnut mixture. Place nut side up 2 inches apart on ungreased cookie sheet.
Bake at 350 degrees for 7-9 minutes or until set and slightly cracked. Remove from cookie sheet and cool on racks completely before inhaling!
OMG, this was such a good cookie!! They are flying out of the cookie jar. I usually do not like Milky Ways but this is the exception for me.

look at my cool new shoes that are on their way
So, I finally decided I wanted shoes. Then came the quest of what kind of shoes - my shoe collection told me I desperately needed a new summer shoe. Part of my shoe choice has to do with the fact we are going to Disneyland in August, so I wanted a shoe that would be ideal to wear around the park in the super summer heat.
I picked the green ones 0r jade as the designer calls 'em. They are on their way as we speak. Yippy! I thought they would help keep my feet cool and comfortable as we are trekking around the happiest place on earth.
Speaking of Disneyland, does anyone have any tips, links, or wisdom on taking such a trip with a 5 year old?? Where to eat on the reasonable end of the spectrum and eat vegetarian?? I want to have a good game plan before we get there, so we are not overwhelmed by all the lights and pretty colors. This will be Daria's first plane ride too - so any good advice on flying with a child would be greatly appreciated. Luckily, the plane ride is only 2 1/2 hours and non-stop, so I think excitement will last the whole ride.
My lists are already compiled in my head - I will be putting things to paper tonight.
And in other news....
These vegan sausages are a new item at the store. I bought the Mexican Chipotle, and OMG they are spicy and oh so good. The come in a package of 4 sausages. I used 2 for our dinner and made scramble eggs with spicy "sausage" with cheese wrapped in tortillas. This was too spicy for Daria, but Micah and I enjoyed it. I think I will put the other 2 on pizza tomorrow night.
Earlier in the week, I made Rich Banana Bread. This was so simple and super delicious! I highly recommend this one when you have extra ripe bananas around .

my jaw dropped and I wanted to cry after I heard this...
They moved in about 2 1/2 weeks ago.
There is a mother, father, 10 year old daughter, and 8 year old son.
You see, this house has been pretty much vacant since last September.
It has been nice not having anyone living there.
Nice and quiet.
Quiet and nice.
I knew that the quiet was ending soon.
I just did not know that the volume would increase over 200%.
Well, tonight we were given a little more insight into their family dynamic.
As I sat down here at the computer, I heard loud voices coming from the kitchen window - which faces towards the neighbor's backyard.
Being the noisy bitch that I am, I went to the window to hear what all the yelling was about.
Well, this is what I heard: (and this is word for word true)
mother: I drink because of YOU guys around here! and I am going out tonight!
10 year old daughter: Oh yeah, well go then.
mother: NO ONE up here on the deck. It is MY deck! This is the drinking deck. NO ONE up here unless you are drinking! I am going out tonight away from you guys!
10 year old daughter: Get your DRUNK ASS out of here then!!!
mother: I am going out tonight.....
Wow! Now that is neighborhood entertainment.

After all the hype and hoopla, 6-6-06 was just a day around here. A couple of you mentioned the crazy weather you experienced, but in our neck of the woods, the weather was beautiful and the day's interactions and experiences were pleasant. Micah even made dinner last night, and that is just telling me Beezlebub works in mysterious ways.
